The inspiration for this mocktail came from a few sources: the unexpected flavors of twist of lemon served with an espresso in Italy, the beautiful red of pomegranate that tells me the holidays are here, and the over arching goal I’ve been pursuing of creating something a little bit more adult and unexpected to enjoy with friends this holiday season.
The result is a slightly sweet (but not too much) and complex mocktail with hints of bitterness and a tangy finish.

Coffee, Grapefruit and Pomegranate Mocktail

Ingredients
- Juice of half a grapefruit
- 1/2 c brewed coffee, cooled
- 1/2 c pomegranate juice
- 1 tsp Maraschino cherry juice
- 1 tsp Malt Barley Extract Syrup or molasses
Instructions
- Use a peeler to remove two large swaths of grapefruit peel to use for garnish, set aside
- Juice grapefruit
- Add grapefruit juice and remaining ingredients to shaker
- Stir without ice to dissolve syrup
- Add ice to shaker and shake
- Strain into a coupe or martini glass
- Garnish with grapefruit peel twist and maraschino cherries
