A strong, savory nose of apple cider vinegar, herbs and spices. Some found it bordering on too sweet, but it is balanced by a bit of spice. Light bubbles add good texture. Lemony sourness and notes of cinnamon, nutmeg, and ginger with a peppery taste at the end (one panelist detected white pepper). Some recommended adding more citrus and serving over ice.

Black pepper on the nose with a tannic quality from the Douglas fir. A very subtle burn at the back of the throat and tongue. Notes of berry juice although not terribly tart. Overall, a savory drink. We recommend a slight splash of tonic.

A nose of cotton candy, coconut, and cream cheese frosting, while somehow not overly sweet. Mellow and simple, with a lingering honey flavor. Some panelists would have liked more bubbles, others hoped for more ginger. We felt this would do well as an ingredient for mixology.

Lemon-mint nose. A tea-like quality and texture with the addition of bubbles creates a sparkling herbal iced tea vibe.

A unanimous panel favorite. Spicy, tequila-forward nose. The flavor is balanced with a pleasant savory characteristic. Has a full mouthfeel and a long, lingering finish. The heat level leaves the mouth tingling rather than burning.

Scents of grapefruit, and sweet pineapple. Flavor notes included tea, lime and grapefruit. It was tart, not too sweet, a bit earthy and gave a sense of saltiness (one panelist thought it tasted like it has electrolytes). We thought the abundant, fine bubbles added great texture.

Complex notes of pine, sarsaparilla, lime, spice, herbs, and caramel on the nose. The initial flavors were sweet, transitioning to a pleasantly lingering bitterness with notes of pine, quinine and juniper coupled with astringency and strong bubbles. We found this very complex. The panel felt this drink was consistent with their expectation of a spritz interpreted through a Northwest lens. They also noted that this gave them the experience they might associate with an alcoholic cocktail in terms of depth and complexity.

A panel favorite. We detected scents of peach, black tea, pineapple, mango, coconut, and green pineapple. The flavor was coconut forward, with lychee and herbiness, and slightly acidic. Lightly sparkling, not-too-heavy, yet filling and dessert-like. Sweet but not cloying or overpowering. The sweetness is balanced by complex flavor.

Orange, ginger, tea, and generally tropical, juicy notes on the nose. Balanced in sweetness with medium bubbles, the sweetness offset by a pleasant tartness. Ginger carries through to a lingering finish reminiscent of ginger ale, while tea notes are present without dominating. A subtle warmth rounds out the palate without tipping into spice.
