Juanita Unger, the Seattle-based NA Sommelier, brings the same rigors and economics to building an NA beverage program as one would to a traditional bar paired with a focus on what’s in the glass and how it’s made. With more than two decades in food and beverage and five years alcohol-free herself, she treats a thoughtful nonalcoholic program as its own discipline rather than a lesser version of hospitality.
