Deep Smoke – A grown up Alcohol Free Cocktail

With a distinct complexity, hint of spice and a leathery depth of flavor, this "adult" mocktail can be served in a brandy snifter or in a rocks glass with one large cube. Three separate parts (all can be made ahead), add a sophisticated blend of flavors to warm your winter nights.

This alcohol-free adult beverage is an exploration of smokey and deep flavors designed to combat the deep-freeze of winter with a little warmth. Something to sip in a leather chair in front of the fire with your dog at your feet.

WIth complex notes of smoke, tea, lemon, clove and molasses and a spicy finish, this cocktail is meant to satisfy an adult palate. The smokiness of lapsang souchong is balanced with citrus notes for a complex combination of notes.

Ingredients

Smokey Spiced Tea

2 Tbsp Lapsang Souchong tea. (I like the from Admari Tea, link below)
1 tsp hot chili flakes
1 tsp whole cloves
1 tsp whole allspice berries
1 c water

Brown sugar ginger syrup

1/2 c dark brown sugar
1/2 c water
1" piece of ginger, finely grated

Earl Grey tea

1 c Earl Grey tea prepared with hot water

Other ingredients

1 lemon for garnish

Instructions

To prepare

Add all ingredients for the Smokey Spiced Tea to a pot. Bring to a simmer, remove from heat and let cool. Strain.
To another pot, add ingredients for Brown sugar ginger syrup, bring to a simmer, stir until sugar is disolved,. Let cool. Strain
Prepare Early Grey tea and let cool.
To a rocks glass add:
1/2 c Smokey Spiced tea
1/4 c Earl Grey tea
2 tsp brown sugar ginger syrup
stir
Add ice
Garnish with a lemon twist to bring out the lemon notes of the Earl Grey
